I will add this......the beef industry is trying many things to "value add" to lower cost cuts.  One of those things is composite cuts made from tender pieces that don't come from steak or roast cuts.  I support food inspection and the USDA and have no problem trusting things that come from this science.

As to the "grassfed" myth.......I have seen some pasture operations that made me want to stop eating meat all together.  I have seen some organic vegetable farms that scare the crap out of me.  I have seen some "dairy farms" selling raw milk that make me sick.  It is not the type of production that makes something better.....it is the type of producer who does it.
