The point seems to be that natural fats, in moderation, are really quite healthy, and processed fats - like all of the modern highly-processed and "fast" foods - are much less so. The more we eat like a 1948 farm family instead of a 2014 drive-through society, the better off we will be. Fresh, whole, unadulterated and NOT shelf stable is the best for all of us in the end.

We worry so much about GMO crops - not entirely unfounded, but mostly - and give no thought to the plethora of chemicals that let us put a box dinner on the shelf for three years and have it taste and look exactly like fresh. That is not the way things are really supposed to be. Cheese is not orange. Watermelon should not be in the stores in February in the northern hemisphere. This is nutritionally and energy-based unsustainable behavior.
