Barb, the brown eggs come from chicken breeds that lay brown colored eggs.  There may be a difference in the egg composition between breeds, but I doubt it.  The eggs that you are getting are organic which means the chickens have to have access to the outdoors and that may change the nutrient profile if they are eating out there, but don't assume that as nothing in the organic standards require they eat from the wild or even go outside, only that they have the option.

The chickens I used to raise laid blue eggs, but they were the same on the inside.  Now, if you want a special egg to bake with I highly recommend duck eggs.  We used to collect from the Mallards in the winter and we would make 1 inch thick waffles and pancakes and cakes that would rise up to 2 1/2 inches tall.  I miss them and so do the local coyotes.
